LA JOLLA RESTAURANTS
Jack’s La JollaThe multilevel Jack’s of La Jolla opened last August, and it has been described as “perhaps most emblematic of San Diego’s shift toward the foodie big time” by the New York Times. Tony DiSalvo, most recently chef de cuisine at Jean Georges, New York City, is the chef and co-owner of the newly opened restaurant. Chef DiSalvo began cooking at the age of thirteen at the Hotel Thayer in Highland Falls, New York, and has since gained a resume that reads like a celebrity chef. Upon graduation from the Culinary Institute of America in 1995, DiSalvo took a position at New York’s La Goulue under the tutelage of Philippe Smith. From there he moved on to Gramercy Tavern, and then to Jean-George’s in New York’s Trump Tower. Jack’s offers the Sidewalk Café, the Wine Bar, which stays open until 2 a.m. (an anomaly in quiet La Jolla), Jack’s Grille and the more formal dining room at Jack’s with seven- or nine-course tasting menus. Such choices as sautéed Sonoma foie gras with passion fruit, red wine and baby bok choy, and poached Maine lobster with risotto, Sonoma apple and kaffir lime broth have swiftly attracted a following.
